Happy Health Literacy Month!

Consulting with a DoctorOctober is Health Literacy Month! Today I’d like to offer you some of our best health literacy resources. Here’s a preview of the Health Literacy handout that’s usually reserved for people who get the popular Health Literacy PowerPoint from the Nutrition Education Store.

What is Health Literacy?

Health literacy is “the degree to which individuals have the capacity to obtain, process, and understand basic health information and services needed to make appropriate health decisions” (source).

There are three main components of health literacy:

  • Obtain
  • Process
  • Understand

Step One: Obtain

To obtain good health information, you need to know the difference between scientific facts and unfounded opinions.

Consider the source. What’s in it for them? For example, a health food store might tell you to purchase something that you don’t really need, while the Tobacco Institute asserted that smoking was safe to consume for many many years.

Choose scientific resources. Scientific studies that are published in peer-reviewed journals are a great place for obtaining good evidence. You don’t have to go through the journals themselves — try consumer-friendly sources like the Dietary Guidelines for Americans and MyPlate.

Seek the truth, not a magic bullet. Sometime change is hard, but that doesn’t mean it isn’t worth your while.

Step Two: Process

The more you read and learn, the more you will be able to process information and evaluate what you read. To successfully process health information, you must have the ability, will, and capacity to change.

You can’t always control your condition. You can control your participation and willingness to learn.

Step Three: Understand

Do you understand enough of what you’re learning? Will you be able to make decisions based on your understanding?

Try these steps to build up your understanding…

  • Read as much as you can (remember those credible sources).
  • Ask questions when you visit your healthcare team.
  • Find professionals that you trust.
  • Take notes.
  • Come up with your own action plan.

Exercise is an important tool for achieving a healthy lifestyle. But beware of this diet pitfall: Exercise alone will not help you reach your weight loss goals, especially if you’re eating a high-calorie diet filled with solid fats and added sugar.

Exercise does burn calories, but there is a common misperception about just how long it takes to burn enough calories to equal the calories in a meal, snack, or drink. This chart includes the calorie counts of common food choices in the typical American diet, and the duration of time that a 150-pound person needs to walk in order to burn off those calories.

How long will it take you to work it off?

Get a personalized guide to both food and exercise at Food and Health’s Exercise and Calorie Calculator. You can access it for free at https://foodandhealth.com/excalc.php!

Simply choose an activity (aerobics, yoga, walking, etc), then enter the amount of time you will take to do it. Fill in your weight in pounds, then click “Compute”. You’ll end up with a number of calories burned.

The figures are based on moderate activity levels. If your workouts are more vigorous, you can add a few calories to the number you burn.

Fabulous Fruits and VeggiesYou already know that September is Fruits and Veggies More Matters Month, but have you seen our new fruit and vegetable poster?

This is one of my favorites yet, and it offers a great way to promote healthful eating patterns. Fabulous Fruits and Veggies is perfect for offices, health fair displays, cooking demonstrations, cafeterias, schools, and more!

So how did this one come to be?

Here’s a sneak peek…

After seeing all the gorgeous fruits and vegetables at the Davis farmers’ markets, I knew that I had to feature their magnificent colors and textures in a new poster. I wanted to highlight the brightness and freshness of fruits and veggies, but I wasn’t quite sure how to start.

The answer lay in a collage.

I combined images of various fruits and vegetables, arranging them into bright patterns and stripes. And that’s when it hit me — fruits and veggies can take you up, up, and away! What better way to highlight that health and energy boost than with the colorful hot air balloons that so often dot the skies by my house.

I worked with my team of artists to create a picture of people setting off on hot air balloon adventures, adjusting and tweaking the picture until I got it just right.

That’s where my editorial team came in. We did a few rounds of brainstorming, exploring titles like “Fuel Your Adventures with Fruits and Vegetables,” “Fruit and Vegetable Explorations,” and “Get and Fruit and Vegetable Boost,” but ultimately, we decided to keep it simple with “Fabulous Fruits and Veggies.”

And here comes the best part.

It’s time for an exclusive look at the handout that accompanies our awesome Nutrition from A to Z poster! How will you use your free copy?

A is for Apples. An apple a day may be a cliche, but cliches exist for a reason. You see, apples are naturally fat-free and are very low in sodium. They are also excellent sources of fiber, antioxidants, and vital nutrients like vitamin C. Try one today!

B is for Balance. MyPlate and the Dietary Guidelines both emphasize the importance of balance in your life. Balance your calorie intake with physical activity, and balance your plate according to MyPlate’s proportion guidelines.

C is for Cooking. When you cook at home, you control exactly what goes into your meals. Cook healthfully with plenty of fruits and vegetables, as well as whole grains, lean protein, and nonfat dairy.

D is for Dairy. MyPlate and the Dietary Guidelines for Americans advise people to choose low- or nonfat dairy when possible. The saturated fat found in dairy products is very bad for your health, especially your heart!

E is for Empty Calories. According to MyPlate, foods with empty calories are foods that contain solid fats and added sugars. They are usually calorie-dense, but these calories are very nutrient-light. Avoid foods with empty calories whenever you can — they just aren’t good for you.

F is for Fruit. MyPlate’s fruit group contains everything from stone fruits to berries to tropical rarities. Follow MyPlate’s advice and fill half your plate with fruits and vegetables at every meal.

G is for Grains. MyPlate advises people to make at least half the grains they eat whole grains, every day. In a rut? Try a new whole grain like amaranth, bulgur, or quinoa!

H is for Healthy Eating Patterns. The Dietary Guidelines for Americans insist that healthy eating patterns should meet nutrient needs at a reasonable calorie level. Stick to nutrient-dense foods whenever you can.

I is for Include Seafood. Did you know that most people should consume at least 8 ounces of cooked seafood per week? That’s what MyPlate suggests. Just remember to keep seafood preparations lean and sidestep breaded or fried options.

J is for Juice. If you do drink juice, be sure to choose options that are 100% fruit or vegetables. Juice is a hiding place for a surprising amount of added sugars. Don’t fall into the trap! Choose 100% juice instead.

K is for Kids. Did you know that kids need at least 60 minutes of exercise every day? The Dietary Guidelines for Americans posts that number as the minimum for most children, so get out there and play!

L is for Lean. When you go to get your servings from the protein food group, stick to lean options. Try beans, peas, white meat poultry, or lean cuts of beef or pork.

M is for MyPlate. Follow the plate! At each meal, half your plate should be filled with fruits and vegetables, with the rest divided equally between protein and grains. Add a bit of dairy too, and remember to keep things balanced!

N is for Nutrients. Most Americans aren’t getting enough nutrients. According to the Dietary Guidelines for Americans, people should replace foods that are made mostly of empty calories with nutrient-dense foods. Nutrients of concern in American diets include calcium, potassium, vitamin D and dietary fiber.

O is for Orange. Oranges are a nutrient powerhouse. They are full of vitamin C, antioxidants, and fiber. Eating oranges may also help lower your blood pressure and cholesterol. Try one today!

P is for Protein. MyPlate’s protein group is filled with meat, nuts, poultry, seeds, seafood, eggs, beans, and peas. Eat a wide variety of lean options daily.

Q is for Quality of Life. According to the Dietary Guidelines for Americans, “Achieving and sustaining appropriate body weight across the lifespan is vital to maintaining good health and quality of life” (2010, page 8).

R is for Reduced Risk. MyPlate claims that eating fruits and vegetables will reduce your risk of heart disease. That’s just one more reason to fill half your plate with fruits and veggies at each meal.

S is for Sodium. Most people are consuming way too much sodium. The Dietary Guidelines for Americans advise people to keep sodium consumption below 2300 mg per day. People who are African American, are over 51, or who have hypertension, diabetes, or kidney disease should all consume less than 1500 mg of sodium per day.

T is for Tomato. Tomatoes are filled with key nutrients to improve your health. They are excellent sources of vitamins A, C, and K, and also contain fiber and several B vitamins.

U is for Unique. Did you know that beans and peas are unique foods? MyPlate counts them as both a vegetable and a protein, so tally them where you need them the most!

V is for Variety. While portion sizes should stay small, it is important to eat a variety of fresh and healthful foods. Don’t fall into the rut of eating the same foods over and over — you could be missing out on nutrients! Look for new and nutritious foods to try each day.

W is for Water. One of MyPlate’s key consumer messages is to replace sugary drinks like soda and sport beverages with water. Water is essential to health, and many people don’t drink enough of it.

Y is for Yogurt. Yogurt is a great source of calcium, but make sure that it doesn’t overload you with sugar and fat. Stick to low- or nonfat options, and check sugar content to make sure it isn’t too high.

Z is for Zone. Keep foods out of the danger zone. Food that has been sitting out at 40-140 degrees F for more than 2 hours is no longer safe to eat.

New Study: Mushrooms and Vitamin D

We know that vitamin D is considered a nutrient of concern by the Dietary Guidelines for Americans, which means that most people don’t get enough of it. But according to the latest study from the Journal of Dermato-Endocrinology, the situation is more dire than that. In fact, the authors of the study Photobiology of vitamin D in mushrooms and its bioavailability in humans declare that “Vitamin D deficiency is a pandemic.”

Do you know your mushrooms?Since vitamin D deficiency has raised the risk of a variety of chronic diseases and skeletal diseases, getting enough vitamin D should be high on your clients’ to-do lists. Getting enough vitamin D will reduce the risk of disease and boost health, which can make selling this goal to your clients much easier. In fact, Keegan et.al. assert “obtaining vitamin D from sensible sun exposure, foods that naturally contain vitamin D, and from supplementation with vitamin D is imperative to maintain a healthy lifestyle.”

So, it’s time to look at the study and determine how mushrooms could play a role in good health.

But, before we begin, we want to draw your attention to the disclaimer we found at the bottom of the article…

“This work was supported by The Mushroom Council and from the National Institutes of Health Clinical Translational Science Institute Grant UL1-TR000157. The funders had no role in study design, data collection and analysis, decision to publish or preparation of the manuscript; ClinicalTrials.gov Identifier: NCT01815437.”

Anyway, now you know who supported this study and to what degree. Let’s move on to the science.

Gotta love mushrooms!According to the study, “Mushrooms exposed to sunlight or UV radiation are an excellent source of dietary vitamin D2 because they contain high concentrations of the vitamin D precursor, provitamin D2.” Furthermore, “ingestion of 2000 IUs of vitamin D2 in mushrooms is as effective as ingesting 2000 IUs of vitamin D2 or vitamin D3 in a supplement in raising and maintaining blood levels of 25-hydroxyvitamin D which is a marker for a person’s vitamin D status.”

In other words, mushrooms are as effective as vitamin D supplements when it comes to raising vitamin D to reasonable levels in the body.

But how do mushrooms become vitamin D powerhouses?

The researchers explain, “When exposed to UV radiation, mushrooms become an abundant source of vitamin D2.” That’s how they can be used as vitamin D boosters to help people reduce their risk of disease.

The study concludes, “Therefore ingesting mushrooms containing vitamin D2 can be an effective strategy to enhance the vitamin D status of the consumer. The observation that some mushrooms when exposed to UVB radiation also produce vitamin D3 and vitamin D4 can also provide the consumer with at least two additional vitamin Ds.”

So, the bottom line is that most people don’t get enough vitamin D, but consuming mushrooms exposed to UV radiation could help people improve their vitamin D profiles.

Where Does the Information Come From?

How does Food and Health get the information it offers?

I’ve been asked that question a lot lately, and since I’m so proud of the answer, I want to share it with you. After all, it’s important to get your information from sources that are trustworthy and accurate. How else are you going to have confidence in what you offer your clients?

Dietry Guidelines for Americans

So, let’s start with the Dietary Guidelines for Americans.

The Dietary Guidelines are our gold standard and the base for many of our materials and articles. To make the guidelines, a committee of university professors go through the latest peer-reviewed journals and distill the most important information into a document for the public. These guidelines are updated every five years, and a new update is just around the corner!

MyPlate is also a key player on our stage. Put forward by the United States Department of Agriculture (USDA), MyPlate is based on the Dietary Guidelines for Americans and offers a guide to what people should eat each day, along with descriptions of the health impact of various foods. MyPlate is key to the health and nutrition policies of many government agencies and public schools.

Now let’s talk about our team. After all, what we do with the information is almost as important as where we get it, right?

Video Marketing: Does Your Site Need It?

I’ve recently been exploring the realm of video marketing, and today I’d like to share what I’ve learned. I hope you like it!

Make a Video!In 2011, Google made $37.9 billion dollars from AdWords, which sells ads for Google search results. Its advertising philosophy is based on measurable data. Take this exchange between Google’s founder, Eric Schmidt and Mel Karmazin, president of Viacom and CBS, as an example.

“Our business is highly measurable,” Google’s founder, Eric Schmidt said. “We know that if you spend X dollars on ads, you’ll get Y dollars in revenues per industry, per customer.” Mel Karmazin, President of Viacom and CBS argued back, “You buy a commercial in the Super Bowl, you’re going to pay two and one-half million dollars for the spot,” Karmazin said. “I have no idea if it’s going to work. You pay your money, you take your chances.” Karmazin trained his eyes on his Google hosts, his hands folded on the table, his cuff links gleaming, and protested, only half in jest, “You’re f***ing with the magic!”

This scene comes from the book, Googled, by Ken Auletta. Now how does video marketing stack up, given the data at Google’s disposal?

The answer lies in AdWords.

Advertising RevenueIn 2013, internet ad sales blew past broadcast revenues with a total of $66 billion to broadcasting’s $42 billion. I have jumped on this bandwagon and have been using AdWords myself. It’s not an easy process. To become proficient — having sales be greater than the cost of advertising — took me a year of research and participation in the Perry Marshall Group. I have also spent several thousand dollars on the “Internet Stupid Tax” as Perry likes to call the wasted ad dollars spent in Google AdWords. This usually occurs when keywords are too broad or your landing page is too generic. So I am no newcomer to the process.

Yet I think that AdWords is vital for most business for two reasons. First, it brings in new customers. Second, it makes the customers come to you instead of your competition! So now let’s talk video.

Video is an important puzzle piece to a good landing page on the internet.

Whether you plan to drive traffic via email, organic search, or pay per click, you have to have a good web page that converts visitors to customers. This is called a good capture rate and it is the key to success on the internet.

What Brings People to Your Website?A good capture rate usually requires a good video. When I consulted a business coach, (the marketing director for Johnson and Johnson for over 20 years) he showed me the work he did for his latest client, increasing her business from $300K to $1 million with one video. In this one video, the site addressed all of her potential customers’ worries.

Here are the statistics for this the use of video on the internet. Check out the  power, popularity, and sales statistics!

  • A video in email increases the click rate by 96% (according to an Implix email marketing survey).
  • 90% of online shoppers at Amazon say online videos are useful and help them decide on a purchase.
  • 75% of executives surveyed by Forbes say that they watch a business related video at least once a week. 65% of these visit the retailer’s website after watching the video.
  • According to the Online Publisher’s Association, 80% of people recall watching a video ad on a website in the past month.
  • 64% of people are more likely to buy a product after watching a video.
  • Real estate properties with videos receive 403% more inquiries than properties without videos.
  • Forbes Insight found that 65% of executives say they would rather watch a video than read text.
    • They are reading how-to advice along with videos about a product or service.
    • 50% of these videos are watched on YouTube.
  • According to Dr. James McQuivey of Forrester Research, one video is worth 1.8 million words.
  • 100 million people use the internet every day. Most watch videos each day.
  • The Forrester Marketing group surveyed businesses and found that when an email had a video, the click rate increased by 200-300%.
  • Videos increase people’s understanding of your product or service by 74%.
  • YouTube is the number two search engine in the world.
  • 1/3 of all online activity is spent watching videos.

So what do you think? Is a video right for your site?

The bottom line is that video is a valuable medium that is sought after by many people each day on the internet. Video can vastly increase sales on a website for a product or service.

But let’s get back to visual learning. Visual learning happens when a person engages with concepts, data, and ideas through visual tools like images. Displays, posters, charts, graphs, and other illustrations of key concepts all appeal to visual learners.

MyPlate BannerSince many studies indicate that a holistic approach to various learning styles is often the most effective (offering auditory, kinesthetic, and visual resources together), visual resources can play a key role in any educational endeavor.

So, how do people incorporate these visual resources?

The most common ways that health educators use visuals like banners in the workplace are in either health fairs or cafeteria decorations. The latter offers a chance to brighten up dull cafeteria walls while reinforcing nutrition and health lessons when they can be the most useful. The former, in health fairs, provides a way to draw people to their booths. Once they’re there, people can try sample foods, read handouts, and learn the lessons that the presenters want to offer.

Help Kids Eat More Vegetables

According to the Centers for Disease Control and Prevention (CDC), “9 in 10 children didn’t eat enough vegetables in 2007-2010.”

After all, eating a wide variety of vegetables is critical to good health. Take MyPlate’s advice, for example. “People who eat more fruits and vegetables as part of an overall healthy diet are likely to have a reduced risk of some chronic diseases.” Plus, the Dietary Guidelines for Americans counsel people to “Increase vegetable and fruit intake” and “Eat a variety of vegetables.”

Getting enough vegetables is especially important for children. The CDC asserts “Healthy eating in childhood and adolescence is important for proper growth and development and can prevent health problems such as obesity, dental caries, iron deficiency, and osteoporosis.”

It’s time to turn things around and help kids get the vegetables they need.

Salad Activity Ideas:

Activity #1 — Salad Taste Test: Fill a bowl with lettuce leaves and pass it around. Have each child taste a piece of lettuce and describe it. Repeat the taste test with other salad ingredients, then use the felt to show ways the ingredients can be combined into yummy salads. If you have the time and budget, offer real salad ingredients for kids to mix and match. Let them eat their creations.

Activity #2 — Fun Facts: Divide the kids into groups and give each a different felt ingredient. With younger kids, have each group think of something that makes that ingredient special. With older kids, have them research the health impact of that ingredient. Have each group present their findings and put their piece in the tray. At the end, present the tray to the kids — look at the great salad they can make together!
